Blessed Bite

Typically, I like variety. It's the spice of life, and all that. But when it comes to breakfast, I could eat one thing every morning and remain a very, very happy woman.

That thing, that blessed bite, would be an egg and cheese biscuit. I'm an equal opportunity e&c eater, mind you. I'll take the eggs in any form, the biscuit plain or adorned, and the cheese any way you slice it. So long as those three staple ingredients are resting atop one another, I'm set.

This week, Hubs whipped up the crowning achievement witnessed above. The biscuit base was a cheddar and chive mound of bliss from our nearby natural foods store. Resting in pillowy heaven above it was a fluffy puff of The Ladies finest. And, above it all were nuggets of a sharp cheddar, wild smoked salmon, capers, and a sprinkle of paprika. He served it open face, with a knife and fork. Civilized egg and cheese biscuits, if you will.

Proof, writ large, that you can never, ever have too much of a good thing.

  4. This morning I whipped up one of my favorite brekkys (though I love breakfast so much that I could never choose one favorite form). Bob's Red Mill 10 grain hot cereal. It's like the best of grits and cream of wheat. Mix in some brown sugar and milk, and you're set. I tried a variation, however, that did not work. Something turned the whole lot sour, and I couldn't stomach it. Eggs cheese and french bread to the rescue! It doesn't take long to assemble a quick brekky sandwich, and within moments I was walking the dogs and munching on melted cheese.
