Better With Butter (+Giveaway!!!)

I used to be an incredibly frugal butter-spreader. In other words, sure, I'd put butter on my toast or my baked potato, but only in the tiniest, slightest, skimpiest amount imaginable. Once I discovered, though, that whole, full, nutritious, all-natural animal fats made me feel and look better, I started slathering it on, thickly.

Now I use butter in almost everything I bake, spread it liberally on biscuits, and put a nice amount into a bowl of hot peas. I also often make my own butter. It's creamy, whipped goodness is amazing, and incredibly easy to "whip up." Here's how: 

Shake, Rattle, & Roll

Yield: Approximately 1 cup. 

You will need:
-1 quart-sized jar with lid
-1 pint heavy cream
-1 glass marble
-Cutting board
- ¼ tsp. salt, optional

To Prepare:
1. Allow cream to come to room temperature, or right around 72-74° F. To do this, simply take the cream out of the refrigerator, set it on the counter, put a dairy thermometer into it, and check on it every 30 minutes or so until the temperature rises. This allows the cream to ripen slightly, raising its acidity, and thereby becoming easier to whip and full of flavor.
2. Place cream and marble inside of your jar, secure the lid, and begin shaking vigorously.
3. Continue shaking, about once per second, until the cream begins to thicken. You’ll hear it, as it changes from a constant sloshing sound to a heavier thud. This process will take anywhere between 5-30 minutes, depending on the intensity and frequency of the shaking.
4. Using a spatula, remove the butter from the jar, draining off the buttermilk (save that for biscuits or cornbread-making!).
5. Take the marble out, place the butter in a medium-sized bowl, and run cold water over it. Empty the water out, and repeat several times until the water is clear in the bowl. Strain off any remaining water.
6. If using salt, stir it in with a metal spoon. Otherwise, place the butter on a cutting board.
7. Using either clean hands or a wooden spoon, begin pressing the butter repeatedly, allowing any liquid inside of it to drain off. Continue pressing until you no longer see liquid coming from your butter.
8. Depending on whether you intend to use your butter now or in the future, you can store at room temperature in a butter crock, or chilled or frozen in wax or parchment paper, or a covered container in the refrigerator or the freezer. 

In recognition of this most delicious of condiments, I'm doing a giveaway today of a butter bell, also known as a butter crock. Pictured above, butter bells have been in use for ages, keeping butter fresh without refrigeration. Butter is placed in the recessed vessel on top, the bottom basin is filled about 2/3rds of the way with cold water, and then the butter-holding vessel is placed butter-side down. You'll need to refresh the water daily to keep the butter from spoiling.    

With the American Thanksgiving holiday on its way next week, I thought a butter bell would be a nifty addition to the bountiful spreads that will be appearing on tables coast to coast. If you've never made butter before, give it a go. I think you'll be amazed at just how easy and delicious it is. And all of your friends and family will be beyond thankful, come Thanksgiving, for your butter-making chops.

  2. I LOVE butter. I grew up in a house where only margarine was kept and I never knew what I was missing until I moved out. Given the amount of butter we use, we always have some out at room temperature and I have long thought about getting a butter bell. This would be perfect at our house and get a lot of use!

    I've made my own butter (honey butter to be exact) and it was divine!

A couple of years back, someone shared a recipe with me for a delicious old-fashioned butter toffee (the thin, chocolate and nut-coated crunchy kind) and it has fast become a treat that everyone expects from me as a gift during the holidays. After all, why wouldn't something made from a pound of butter, a pound of sugar, and nearly a pound of chocolate be good?

  7. I love room temperature butter on hot-out-of-the-oven scones. It melts so quickly without chilling the scone.
    I found one at the local thrift shop recently and keep it on my counter, changing the water every two days. I never have to wait for butter to lose the chill. The baking process is much faster now.

  8. Well, ever since reading your book, I've started making my own butter and it is amazing! My fiance doesn't like store-bought butter anymore (so spoiled). We like it on homemade biscuits, banana bread, zucchini bread, and I'll add a pat of it on any roasted veggies. We really haven't found anything that it doesn't complement well!

    My vote is for oven roasted potatoes. I'm not a big fan of white potatoes, prefering sweet potatoes, but with a little butter and roasted until they are brown and crunchy on the botton, I love them.

    In the owrds o fmy 11 yr old who loves our farm fresh eggs from our hens he tells me that SCRAMBLED EGGS with lots of butter while you are turning them in the pan.He knows if I skip the butter so best not do that again.
    Thanks for offering this to us all.
    He has learned to make his own and is very proud of it.We have oour favorite from Golden corral,their honey butter,so we have lots of our own made up for biscuits.

  47. Well my mother used to bake her Thanksgiving turkey after shoving a whole stick of butter into the cavity with the onions. I don't hear of people doing that these days, but I'm going to this Thanksgiving, in her honor. Also, my fav. is to put slabs of butter on fresh, hot, whole wheat sweet potato biscuits (made with fresh sweet potatoes). Oh my...nothing like it!

  58. I've recently discovered that I eat soup solely as a vehicle for crusty bread slathered with good, sweet butter. Why use a spoon when you can scoop soup with buttered bread?? Entire bowls disappear in this manner... Just waiting for my family cow so I can make the stuff myself.

  79. I grew up putting butter on my grandma's homemade banana bread! When she passed the recipe on, I was aghast to find that even she, a farm raised Minnesotan, put crisco in her bread. Well NOT ME! I got ahold of that recipe, happily put the 1/2 cup of butter (not yikes*crisco) and I have never gone back! It comes out of the oven piping hot, I slide some butter over the surface and dig in to some of the best eats I think I've ever had! It reminds me of Gram..only better! Tastes like home!

  81. I love to put a nice helping of butter on a piece of plain bread from the bakery, crumble dark chocolate on top, and toast it in the oven for a bit. The melted chocolate with the butter on the slightly crunchy bread is delicious.

    And I actually just used that shake, rattle & roll recipe the other day. Sadly, my boyfriend and I shook it a little too much and the liquid reincorporated into the butter and I'm not even sure what you'd call that. I was pretty disappointed but next time we'll get it right I'm sure. :)

  90. Every Thanksgiving our family tradition was to make butter by shaking cream in an old mayonaise jar. My brother and I would get tired and my dad would have to finish it off. But it was always worth it! We continue the tradition today.

  91. I grew up in dairy country in upstate NY. We were like the old lady in the Frank's Red Hot commercial - we put that s!*t on everything! I don't know if that is why I never bought into the demonization of animal fats. I just could never make myself eat the fake stuff.

    Anyway, I must, must have butter on pasta. It goes right under the spaghetti sauce I like it on peanut butter sandwiches. I adore it on any kind of potato, rice, etc. Sometimes I put a pat of butter on top of a bowl of bean soup and then grind a lot of black pepper on top of that. Last night I ate a slice of regular, grocery store French bread with a generous helping of some pastured Amish butter I literally buy from a back room fridge at a store I know of. Ahem. I was thinking as I ate it that it was one of the best tasting foods I had ever had. Simple and perfect - what in this world is better than bread and butter?

I found your blog when I purchased your Canning and Preservation book last week :) I just finished reading it today and thought I'd pop in and ask some questions and was surprised to see a Dairy book (in my edition of this book it only mentions the Chickens and the Bees so I assume the dairy book is the latest?). I'm still getting around to reading the rest of this blog (I just finished reading Tuesday's post) but would like to join in this giveaway.

    I like to use butter when I'm finishing fish in the pan. I believe its called poulay (sp?) in French- where when the fish (or anything really) is about to finish, you spoon the butter continuously over the fillet, basting it with the sweet creamy deliciousness that is butter.

  132. Butter is so good and I completely agree with you about it being healthier! I think I might have to make some butter this weekend! If I do... I will use the butter to make crust for a pumpkin pie. Pie crust is always better with butter!

  137. This year, I froze a big batch of sweet Jersey corn, fresh off the cob. That corn, jasmine rice, and a few tablespoons of butter was absolutely soul warming during that October snowstorm!
